| Chia (Salvia hispanica L.) is a summer plant, originally from
Central.
It is considered a good source of fiber, protein and antioxidants. In
aqueous medium, the seed is enveloped in a rich mucilage, which
is excellent for digestion, which together with the grain itself is
a very nutritious food. Chia seed is composed of
approximately 40% of oils, contains about 20%
protein, is cholesterol free and has many important minerals,
